

Release, Baste, Bake, Feast: Your Better Beast Cooking Guide

Got yourself a Beast? Nice move. This isn’t one of those “complicated recipe blogs” where you scroll for 20 minutes before you hit the instructions. Nope—you’ve got the Beast, and all you need to do is release it, baste it, bake it, and then eat like a champ. Simple, tasty, a little messy, and very worth it.
COOKING INSTRUCTIONS
STEP 1. RELEASE THE BEAST
For best results, defrost the Beast before cooking. Unwrap the string and remove the cheesecloth. If it sticks, soak in hot water.
STEP 2. BASTE THE BEAST
Mix the following ingredients together to create a "baste". 1 cup veggie stock, 1/4 cup vegan butter, 1 sprig thyme, 1 sprig rosemary, 3 cloves of garlic, salt, pepper, mix together in bowl and apply liberally to outside of beast.
STEP 3. BAKE THE BEAST
Cook the best uncovered on a baking pan at 350F (176 C) for 60-75 minutes basting every 15 mins to keep things moist. If you have a thermometer, use it to make sure the center is above 160F (73C)
STEP 4. EAT THE BEAST
Remove from the oven, let cool for a few minutes, serve and enjoy!

Step 3 should have “Cook the beast uncovered” not “Cook the best uncovered”

The Beast is on every one of our holiday tables. We love them with all the traditional fixings like mashed potatoes, gravy, sweet potatoe pie, corn, brussel sprouts, cranberry sauce, etc, etc. It’s a holiday tradition at our home.
